INGREDIENTS
-2 salmon steaks
-2 carrots
-1 head of broccoli
-3 scallions
-Teriyaki glaze
-Soy sauce
-Garlic powder
-Salt & Pepper
-Olive oil
-Brown rice
DIRECTIONS
1. Preheat oven to 400 degrees.
2. Prep veggies: peel and dice the carrots and cut the broccoli into florets. Thinly slice the scallions, separating the white/light green parts from the dark green parts.
3. Rip off two large sheets of foil, and divide the carrots, broccoli, and white/light green parts of the scallions evenly between the two pieces of foil. Drizzle vegetables with olive oil and season with salt, pepper, and garlic powder. Toss with your hands to coat.
4. Place a salmon steak on top of the veggies on each piece of foil. Season with salt, pepper, and garlic powder. Top salmon with teriyaki glaze. Fold over and seal the edges of the foil and place on a sheet pan.
5. Bake foil packets in the oven for 25 minutes.
6. Once the packets are ready, remove from oven and open the foil packets. Brush more teriyaki onto the salmon and drizzle with soy sauce.
7. Serve the salmon and veggies in a bowl with brown rice and garnish with the dark green parts of the scallions.
