Greek Kabobs with Tzatziki


Grill-charred chicken and veggies paired with a cooling tzatziki sauce = the perfect summer dinner!

INGREDIENTS

-2 chicken breasts

-1 zucchini

-1 red bell pepper

-1 red onion

-6 wooden skewers

-Soy sauce

-Garlic powder

-Za'atar (can be found at spice shops; link below)

-Dried oregano

-Salt & Pepper

-Olive oil

-1 single serve container plain Greek yogurt

-1/4 cucumber

-1 package fresh dill

-1/2 teaspoon minced garlic

-Juice of 1/2 a lemon

-Salt & Pepper

-Basmati rice

DIRECTIONS

1. Soak wooden skewers in water while you prep the kabobs.

2. Prep the vegetables by quartering the red onion, slicing the zucchini, and large dicing the bell pepper. Add the chopped vegetables to a bowl with a drizzle of olive oil, garlic powder, dried oregano, Za'atar, and salt and pepper. Mix with a spoon to coat.

3. Dice the chicken into large cubes and season the chicken with the same ingredients that you seasoned the veggies with, except add a splash of soy sauce too.

4. To make the tzatziki, mince the cucumber, remove the dill from the stems, and chop the dill. Add the dill and the cucumber to the Greek yogurt and stir in garlic, juice of 1/2 a lemon, and a pinch of salt and pepper.

5. Preheat the grill. Remove the wooden skewers from the water and pat dry. Skewer the chicken and vegetables. Grill the kabobs 5-6 minutes per side.

6. Serve the kabobs over basmati rice with a drizzle of homemade tzatziki.
