Lemony Chicken & Broccoli Pasta


This healthier pasta is given a zesty boost with charred lemon juice.

INGREDIENTS

-1 chicken breast

-Whole wheat flour

-Crushed red pepper

-Garlic powder

-Salt & Pepper

-1 tablespoon olive oil

-1/4 cup chicken broth

-1 lemon

-2 servings whole grain linguine pasta

-1 head broccoli

-Parmesan cheese

DIRECTIONS

1. Bring a pot of salted water to a boil.

2. Cut broccoli into florets and cut the chicken horizontally with a sharp knife into two pieces of chicken.

3. Heat olive oil in a medium skillet over medium heat.

4. Season both sides of the chicken with crushed red pepper, garlic powder, salt and pepper. Then dredge the seasoned chicken in flour. Add to the skillet and cook on both sides until golden brown, about 3-4 minutes per side. Remove to a plate and allow to rest.

5. While the chicken is cooking, add the linguine to the boiling water and cook according to box directions until al dente. Add the broccoli to the boiling water with the pasta about 2 minutes before pasta is finished. Drain pasta and broccoli once finished cooking.

6. In the skillet where you cooked the chicken add the chicken broth, the juice from 1/2 a lemon, and season with salt and pepper. Bring to a simmer and scrape the bottom of the skillet with a wooden spoon to create a sauce.

7. Place the other half of the lemon face down on a small hot skillet and sear until the lemon is charred.

8. To plate layer the pasta, broccoli, and chicken. Drizzle the lemon sauce on top. Sprinkle with Parmesan cheese and garnish with the charred lemon.
