Try this salad while peaches are still in season! It will keep you full and satisfied.
INGREDIENTS
-1 package spring mix lettuce (or lettuce of your choice)
-2 locally grown (Palisade) peaches
-1/2 red onion
-1 serving salted almonds
-2 oz goat cheese
-2 chicken breasts
-2 cloves minced garlic
-White balsamic
-Olive oil
-Salt & Pepper
-1 tablespoon olive oil
-3 tablespoons white balsamic
-Honey
-Salt & Pepper
DIRECTIONS
1. Heat a small drizzle of olive oil in a medium sized skillet over medium heat. Slice the chicken breasts and drizzle with olive oil and white balsamic (enough to coat the chicken), and mix with the minced garlic. Season the chicken with salt and pepper, add chicken to the skillet, and saute until chicken is cooked through.
2. While chicken is cooking, thinly slice the peaches, discarding the pit, and thinly slice the red onion.
3. Place the almonds in a ziplock bag and crush almonds with a rolling pin.
4. To make the dressing, whisk together the olive oil, white balsamic, a large squeeze of honey, and season with salt and pepper.
5. Mix together the lettuce, peaches, onion, almonds, goat cheese, and chicken. Portion out the servings and drizzle with the white balsamic dressing.
