INGREDIENTS
-3 chicken breasts
-Chili Powder
-Garlic Powder
-Onion Powder
-Cumin
-Mexican Oregano
-Cayenne
-Salt & Pepper
-1 red bell pepper
-1 yellow bell pepper
-1 poblano pepper
-1 red onion
-1 avocado
-1 Roma tomato
-1/4 red onion
-Juice of 1 lime
-1 teaspoon minced garlic
-Salt & Pepper
-Serve With: Small Flour Tortillas, Shredded Cheese, Sour Cream, Salsa Verde, and Refried Beans
DIRECTIONS
1. Prep the vegetables: Thinly slice the red bell pepper, yellow bell pepper, and poblano. Slice the onion into half moons.
2. Heat a small amount of olive oil in a large skillet over medium heat. Slice the chicken into strips. Place the chicken in a bowl and season with chili powder, garlic powder, onion powder, cumin, oregano, cayenne, salt, and pepper. Cook the chicken in the skillet until cooked through and remove to a bowl.
3. Do NOT add anymore olive oil to the large skillet. You want the pan to be pretty much dry to get a nice char on the vegetables. Add the sliced vegetables to the large skillet. Season the vegetables with garlic powder, chili powder, salt, and pepper. Saute the peppers and onion until charred and sizzling.
4. To make the avocado salsa, dice the avocado, tomato, and onion. Mix together and add the lime juice, minced garlic, salt, and pepper.
5. Plate the following on a large sheet pan: chicken, peppers and onions, avocado salsa, flour tortillas, shredded cheese, sour cream, salsa verde, and refried beans.
***Variations: You can use steak or shrimp in place of chicken. You can also do any combination of chicken, steak, and/or shrimp.***
