Three Bean Turkey Chili


As winter cools you down, warm up with a hot bowl of (healthy) chili! This truly is the ultimate chili, packed with veggies, legumes, lean meat, and spices!

INGREDIENTS

-1 lb ground turkey

-1 green bell pepper

-2 stalks celery

-1 onion

-1 large jalapeno, de-seeded

-3 cloves minced garlic

-14oz can black beans

-14oz can kidney beans

-14oz can pinto beans

-28oz can tomato sauce

-15oz can Rotel

-1 bottle beer (such as Negra Modelo)

-Shredded sharp cheddar cheese

-Sour cream or Greek yogurt

-Scallions

Spices and Seasonings:

-2 tablespoons chili powder

-1 tablespoon cumin

-2 teaspoons garlic powder

-1 teaspoon onion powder

-1 teaspoon paprika

-1 teaspoon oregano

-1/2 teaspoon cayenne

-1.5-2 teaspoons salt

-1 teaspoon pepper

DIRECTIONS

1. In a large soup pot, cook ground turkey over medium heat.

2. While turkey cooks: (1) measure out spices and seasonings into a small bowl, (2) open the cans, (3) drain and rinse the beans in a colander, and (4) prep the vegetables by dicing the bell pepper, celery, onion, and jalapeno.

3. Once the turkey is cooked, remove to a bowl with a slotted spoon and drain most of the grease out of the pot. Add the bell pepper, celery, onion, and jalapeno to the pot. Saute until vegetables have softened. Add the garlic and saute for another minute.

4. Add the turkey back to the pot. Pour in the beer and deglaze the pot by scraping the bottom of the pot with a wooden spoon. Add in the spices, seasonings, beans, tomato sauce, and Rotel. Cover with a lid and cook on low for 1 hour (or even longer), stirring occasionally.

5. To serve, ladle chili into a bowl and top with cheddar cheese, sour cream/Greek yogurt, and scallions.
