This is the perfect dinner for you if you are looking for Mexican flavors with a twist. This creative take on sweet potato fries will definitely hit the spot!
INGREDIENTS
-1/2 sweet potato
-Salt & Pepper
-Garlic powder
-Chili powder
-Cumin
-Oregano
-1/2 lime
-1 link chorizo, casing removed
-Black beans
-Shredded pepper jack cheese
-Salsa verde
-Cherry tomato, small dice
-Guacamole
-1/2 lime
DIRECTIONS
1. Preheat the oven to 425 degrees.
2. Scrub the sweet potato and cut half of the sweet potatoes into fries. Add to a bowl and toss with a drizzle of olive oil and a generous pinch of the following: salt, pepper, garlic powder, chili powder, cumin, and oregano.
3. Spray a foil-lined baking sheet with cooking spray and add the sweet potato fries in a single layer. Squeeze the juice of half a lime on the fries and bake for about 20 minutes.
4. While the fries cook, drain and rinse the black beans. Also, brown the chorizo in a small skillet.
5. When the fries are cooked, remove from the oven and add to a small cast iron skillet (or any small oven-safe skillet). Top with the chorizo, some of the black beans, and a sprinkle of pepper jack cheese. Return to the oven and bake until cheese has melted.
6. Remove from the oven and drizzle with salsa verde, and top with tomato and a dollop of guacamole. Squeeze lime juice on top and garnish with a lime wedge.
