Looking for a healthy, impressive, and tasty dinner? Well, this dish is SO yummy. The miso vinaigrette really amps up the flavor and it's such a colorful and pretty plate!
INGREDIENTS
(1) 1 chicken breast
(2) 1/2 head broccoli
(3) 1 small handful shredded carrots
(4) 1 small handful shredded red cabbage
(5) 1 scallion
(6) 1 serving brown rice noodles (can substitute soba noodles)
(7) 1 tablespoon soy sauce
(8) 1 tablespoon rice wine vinegar
(9) 1 tablespoon white miso paste
(10) 1 tablespoon canola oil
(11) 1 teaspoon honey
(12) 1 splash sesame oil
(13) 1 clove grated garlic
DIRECTIONS
1. Begin by preparing the miso vinaigrette. Whisk together ingredients 7 through 13.
2. Bring a small pot of water to a boil. Cook the brown rice noodles according to package directions.
3. Heat olive oil in a small skillet over medium heat. Pound the chicken breast flat with a meat mallet. Season both sides of the chicken with salt and pepper. Then marinade in 1/4 of the miso vinaigrette. Cook in the skillet about 5 minutes per side until cooked through. Remove to a cutting board to rest once cooked.
4. While chicken is cooking, chop the broccoli into small florets and slice the scallion.
5. When the noodles are finished, drain in a colander. Then add the noodles, broccoli, carrots, cabbage, and the remaining miso vinaigrette to a bowl and toss to mix.
6. Plate the noodle mixture. Slice the chicken and place on top of the noodle mixture. Then garnish with the sliced scallions.
