Want to indulge in tacos but keep your meal relatively healthy? Look no further! These shrimp tacos are so easy and quick to make, and you could look forward to a home cooked meal in no time!
INGREDIENTS

-***1/2 lb large raw shrimp
-1 small poblano pepper
-1 small red bell pepper
-1/2 small red onion
-Chili powder
-Garlic powder
-Onion powder
-Cumin
-Mexican Oregano
-6 mini flour tortillas
-Guacamole
-1 lime
DIRECTIONS
1. Heat olive oil in a medium skillet over medium heat. Peel and devein shrimp.
2. Add the shrimp to a mixing bowl and season with salt, pepper, chili powder, garlic powder, onion powder, cumin, and oregano.
3. Add the shrimp to the skillet and cook about 4 minutes until opaque.
4. While shrimp cooks, remove seeds from the peppers. Thinly slice the poblano and red bell pepper. Cut the red onion into half-moon slices.
5. Once finished, remove shrimp from the skillet. Add the peppers and onions and season with salt, pepper, garlic powder and chili powder. Squeeze juice of 1/2 a lime onto the vegetables. Saute until softened and charred.
6. Divide the peppers, onions, and shrimp evenly among the tortillas. Top each taco with a dollop of guacamole. Garnish with lime wedge.
***MM Option: To make this meal meatless, leave out the shrimp and substitute in mushroom, zucchini, summer squash, or whatever vegetables you like! You can also add some black beans, pinto beans, or refried beans under the vegetables.
