Another edition of me trying to make a meal out of leftover ingredients from the week! This meal turned out really healthy and was so fast to make!
INGREDIENTS
-1 zucchini
-1 link chicken sausage (I used provolone and sun dried tomato flavored)
-~10 cherry tomatoes
-1 teaspoon balsamic vinegar
-Garlic powder
-Dried oregano
DIRECTIONS
1. Heat olive oil in a medium sized skillet over medium heat. Slice the sausage into rounds. Add the sausage to the skillet and cook about 4 minutes per side.
2. While sausage is cooking, spiralize the zucchini using the "thick spiral" blade attachment of your spiralizer. Cut the cherry tomatoes in half.
3. Add the zucchini and cherry tomatoes to the skillet with the sausage. Drizzle with balsamic vinegar and season with salt, pepper, garlic powder, and oregano.
4. Plate the zoodles and top with Parmesan cheese.
