Chicken Tikka Masala


I LOVE Indian food. Unfortunately, good Indian food can be hard to come by. This recipe always does the trick when I'm craving Indian food, and it is a perfect and unique winter weather meal!

INGREDIENTS

-2 tablespoons butter

-***1 chicken breasts

-1/2 white onion, diced

-1 inch piece of fresh ginger, minced

-3 cloves grated garlic

-8oz tomato sauce

-1/2 cup half and half OR heavy cream

-1/4 cup water

-1/4 teaspoon turmeric

-1 teaspoon chili powder, divided in half

-1 1/2 teaspoons garam masala

-1/2 teaspoon cumin

-1/8 teaspoon cayenne

-1/8 teaspoon cinnamon

-Garlic naan bread

-Basmati rice

-Sliced scallions

DIRECTIONS

1. Begin by measuring out your spices. Lay out two small bowls. To the first bowl, add the turmeric and half of the chili powder. To the second bowl, add the remaining chili powder, garam masala, cumin, cayenne, and cinnamon.

2. Heat 1 tablespoon of butter in a soup pot. Dice the chicken into bite-sized pieces and add to the soup pot. Season with salt and pepper and the spices from the first small bowl. Just cook the outside of the chicken and remove to a bowl (this will keep the chicken from overcooking).

3. Heat the other tablespoon of butter in the soup pot. Add the onion, garlic, and ginger. Season with salt and pepper and the spices from the second small bowl. Saute until onions are softened.

4. Add the chicken back to the pot, along with the tomato sauce, water, and half and half. Season with salt and pepper. Simmer for 10 minutes.

5. Serve the tikka masala over basmati rice with garlic naan bread on the side. Garnish with sliced scallions.

***MM Option: To make this meal meatless, leave out the chicken. Instead, substitute in boiled potatoes and any other vegetables you like (broccoli, cauliflower, peas, green beans, carrots, baby corn, etc.).
