Turn fried rice into a health food with this alternative! Replace rice with riced cauliflower and all of the suddenly this is fried "rice" that you don't need to feel guilty about pigging out on!
INGREDIENTS
-***1/2 lb large raw shrimp, peeled and deveined
-1/2 white onion, diced
-2 scallions
-2 cloves grated garlic
-1 inch piece of fresh ginger, minced
-1 head cauliflower
-1 cup frozen peas and carrots mix
-3 eggs
-1/4 cup soy sauce
-1/8 cup oyster sauce
-1/2 teaspoon sesame oil
DIRECTIONS
1. Heat olive oil in a large skillet. Season the shrimp with salt, pepper, and garlic powder and add to the skillet. Cook about 4 minutes until fully cooked and opaque. Remove to a plate.
2. Heat more olive oil in the large skillet and add the diced onion, grated garlic, and minced ginger. Slice the scallions and add the white/light green parts to the skillet; set aside the dark green parts of the scallions.
3. Meanwhile, cut the cauliflower into florets and add to a food processor. Pulse the cauliflower a few times until the cauliflower resembles rice. Add to the skillet.
4. Add the frozen peas and carrots mix to the cauliflower mixture in skillet. Season the cauliflower mixture with salt and pepper. Cook until vegetables are tender.
5. Make a well in the middle of the skillet by pushing the cauliflower mixture to the sides. Add a small amount of olive oil to the well. Crack eggs into a bowl and whisk with a fork. Add the whisked eggs to the well. Cook until the eggs are scrambled then combine into the cauliflower mixture.
6. Add the shrimp back to the skillet and mix to combine. Plate the fried "rice" and garnish with the dark green parts of the scallions.
***MM Option: You can make this meal meatless by omitting the shrimp and adding in more vegetables (such as broccoli, red bell peppers, water chestnuts, celery, etc.).
