Brussels Sprout Flatbread Pizza


Brussels sprouts, so hot right now. If you are looking for new ways to enjoy the trendiest vegetable around, look no further than this flatbread pizza recipe. It's so quick to throw together with minimal clean up, and it tastes fantastic!

INGREDIENTS

-1 whole grain flatbread (such as naan or pita)

-***1 slice thick cut bacon

-1/4 small red onion

-About 5-7 large Brussels sprouts

-1 clove grated garlic

-Shredded mozzarella

-1-2 tablespoons crumbled feta cheese

-Balsamic glaze

DIRECTIONS

1. Preheat the oven to 400 degrees.

2. Chop the bacon into bite-sized pieces and add to a medium sized skillet over medium heat. Cook until crispy, and remove from the skillet once cooked. Do not discard the bacon grease.

3. While the bacon cooks, prep the vegetables. Discard the wilted outer leaves and the root of the Brussels sprouts. Then cut them in half and thinly slice. Cut the red onion into quartered slices. Once you remove the bacon from the skillet, add the Brussels sprouts, red onion, and garlic to the reserved bacon grease. Season with salt and pepper, and saute for about 1-2 minutes.

4. Place the flatbread on a foil-lined baking sheet. Brush the flatbread with extra virgin olive oil and sprinkle with mozzarella cheese. Then top with the Brussels sprouts mixture, bacon bits, crumbled feta, and another sprinkle of mozzarella.

5. Bake for 10 minutes. Once you remove the pizza from the oven, drizzle with balsamic glaze. Transfer the flatbread pizza to a cutting board and use a pizza cutter to cut into slices. Serve pizza on the cutting board.

***MM Option: To make this meal meatless, leave out the bacon. Instead, cook the Brussels sprouts, red onion, and garlic in olive oil.
