MM: Strawberry Salad with Cranberry-Almond Crusted Goat Cheese


I saw this recipe on Skinny Taste, and I knew I had to try it when I saw the goat cheese (because I <3 goat cheese :D)!!! This salad also makes for such a refreshing and light summertime meal.

INGREDIENTS

-Arugula and spinach mix

-Sliced red onion

-4-5 sliced strawberries

-2oz goat cheese (from a goat cheese log)

-2-3 tablespoons slivered almonds

-2-3 tablespoons dried cranberries

-1/8 cup balsamic

-1/8 cup extra virgin olive oil

-1/4 teaspoon Italian herbs

DIRECTIONS

1. Add the arugula and spinach mix, sliced red onion, and sliced strawberries to a salad bowl.

2. Cut the goat cheese into 4 equal pieces. Roll each of the 4 pieces into balls. Chop up the almonds and dried cranberries and mix them together. Then roll the goat cheese in the almond and cranberry mixture, pressing the mixture into the surface of the goat cheese. Top the salad with the crusted goat cheese balls.

3. Add the balsamic, extra virgin olive oil, and Italian herbs to a small mason jar and shake to combine. Shake and drizzle over the salad.

4. You can also serve this salad with balsamic glazed chicken or salmon for some added protein!
