MM: Mediterranean Farro Salad


This farro salad is PACKED with flavor. It is SO delicious, and including hearty farro means it's filling enough that no protein is needed!

INGREDIENTS

-1 cup raw farro

-1 English cucumber

-1 red bell pepper

-1/2 red onion

-1/4 cup julienned sundried tomatoes

-1 container feta

-1/4 cup extra virgin olive oil

-2 tablespoons red wine vinegar

-Juice of 1 lemon

-1/4 teaspoon salt

-1/4 teaspoon oregano

-1/4 teaspoon garlic powder

DIRECTIONS

1. Rinse the farro with cold water. Bring two cups of water to a boil in a medium sized pot. Add the farro to the boiling water, cover, and cook for 20-23 minutes until most or all of the water is absorbed.

2. While the farro cooks, small dice the cucumber, red bell pepper, and red onion. In a large bowl, combine the cucumber, red bell pepper, red onion, sundried tomatoes, feta, olive oil, red wine vinegar, lemon juice, salt, oregano, and garlic powder.

3. Once the farro is finished, drain and rinse with warm water. Add the farro to the bowl with all of the other ingredients and mix.
