MM: Greek Zoodle Salad with Sundried Tomato Vinaigrette


LOVE this salad. So fresh, clean, and flavorful. You'll be eating a full plate of vegetables with this salad, so you'll definitely feel full after, but if you want to add some protein, I'd recommend salmon!

INGREDIENTS

-1 zucchini

-1/2 orange bell pepper

-~10 heirloom cherry tomatoes

-2-3 tablespoons sliced Kalamata olives

-1-2 tablespoons crumbled feta

-1/4 cup sundried tomatoes

-1/4 cup balsamic vinegar

-1/4 cup extra virgin olive oil

DIRECTIONS

1. Begin by preparing the vinaigrette. Add the sundried tomatoes, balsamic vinegar, extra virgin olive oil, and a pinch each of salt and pepper to a food processor. Blend until mostly smooth.

2. Prepare the vegetables. Spiralize the zucchini using the "thick spiral" blade attachment of your spiralizer. Thinly slice the bell pepper. Cut the cherry tomatoes in half.

3. Add the spiralized zucchini, bell pepper, cherry tomatoes, Kalamata olives, and feta to a mixing bowl. Dress with 2-3 tablespoons of the sundried tomato vinaigrette. Toss with tongs to mix, then plate.
