SM: Shrimp and Asparagus Stir Fry


You can pass on Asia take out with this delicious stir fry! It's super easy, super fast, and won't leave you feeling guilty! You will also love that the ingredient list is nice and short!

INGREDIENTS

-9 large raw shrimp (peeled and deveined)

-1/3 bunch of asparagus

-1 scallion

-1 teaspoon minced garlic

-1 teaspoon minced ginger

-1 tablespoon soy sauce

-1 tablespoon oyster sauce

-1 cup cooked brown rice

DIRECTIONS

1. Begin by prepping the vegetables. Snap the hard ends off the asparagus and cut them in half. Thinly slice the scallion, separating the dark and light green parts.

2. Next, heat olive oil in a medium-sized skillet over medium heat. Cook the shrimp 3 minutes per side and remove from the skillet.

3. Add a little more olive oil to the skillet and add the asparagus. Cook until crisp-tender. Then add the light green parts of the scallions, the garlic, and the ginger to the skillet and saute for about 1 minute.

4. Turn the heat on the burner to low. Add the shrimp back to the skillet. Whisk together the soy sauce and oyster sauce and drizzle over the stir fry. Toss and saute for about 1 minute.

5. Serve the stir fry over the cooked brown rice. Garnish with the dark green parts of the scallion.

***NOTE: Do not season this dish with salt. The soy sauce and oyster sauce provide plenty of saltiness.
