It's been awhile since I've treated myself to some tacos. I usually make shrimp tacos, but today I decided to switch it up and do turkey tacos! This may look like a cheat meal, but it is actually pretty healthy without sacrificing deliciousness!
INGREDIENTS
-1/4 lb lean ground turkey
-1/4 red onion
-1/4 poblano pepper
-1/4 red bell pepper
-***Taco seasoning
-3 corn tortillas (taco sized)
-Guacamole (store bought)
-Salsa verde (store bought)
-Feta
-1/2 lime
DIRECTIONS
1. Begin by preparing the vegetables. Thinly slice the red onion, poblano pepper, and red bell pepper.
2. Heat olive oil in a medium-sized skillet and a small skillet. Place each skillet over medium heat.
3. Add the vegetables to the medium-sized skillet with about half of the taco seasoning and the juice of 1/4 lime. Saute until softened.
4. Add the turkey to the small-sized skillet with the other half of the taco seasoning. Saute until cooked through. When the turkey is close to finished, add about 1 tablespoon of the salsa verde to the skillet (turkey tends to get dry and the salsa helps keep the turkey moist and adds flavor).
5. While the vegetables and turkey cook, toast the tortillas over an open flame on the stove top until the edges are blackened and you can smell the corn.
6. Assemble the tacos. On top of the tortillas, layer the cooked vegetables, cooked turkey, a dollop of guacamole, a drizzle of salsa verde, and a sprinkle of feta. Serve with a lime wedge on the side.
***Taco Seasoning:
-1/2 teaspoon chili powder
-1/2 teaspoon paprika
-1/2 teaspoon cumin
-1/2 teaspoon garlic powder
-1/4 teaspoon salt
-1/4 teaspoon pepper
-1/4 teaspoon oregano
