Allow me to fan-girl for a minute. I am OBSESSED with Trader Joe's. I just started shopping there, and I am an official convert. I am also obsessed with the new Trader Joe's falafel mix. It's so easy to make, delicious, vegan, gluten free, natural, and just generally amazing. It is also an awesome component of this fabulous Mediterranean Mezze Platter. Actually, this entire platter is courtesy of Trader Joe's, which makes for an incredibly easy dinner to throw together!
INGREDIENTS
-1/3 cup Trader Joe's falafel mix
-1/2 container Trader Joe's Tabbouleh
-Trader Joe's Eggplant Hummus
-3 Trader Joe's Dolmas (rice stuffed grape leaves)
-1/4 cup Trader Joe's Greek Olive Medley
-1 piece naan flatbread
-Za'atar seasoning
-Crushed red pepper
DIRECTIONS
1. First, mix together the falafel mix with 1/4 cup of water. Let stand for 30 minutes. Meanwhile, preheat the oven to 350 degrees.
2. Add foil to a sheet pan and spray lightly with olive oil cooking spray. Form the falafel and water mixture into 3 falafels. Place on the sheet pan and spray the tops lightly with olive oil cooking spray. Bake falafels for 25-30 minutes.
3. While the falafel cooks, spray the naan bread with olive oil cooking spray and sprinkle with za'atar seasoning. About 5 minutes before the falafel is finished, place the naan in the oven directly on the rack, and cook for 5 minutes.
4. Begin assembling the mezze platter. Add a dollop of hummus to the plate, drizzle with olive oil, and sprinkle with crushed red pepper. Plate the dolmas around the hummus. Next to the dolmas, plate the olives and tabbouleh.
5. When finished, remove the falafel and naan from the oven at the same time. Cut the naan into wedges.
6. Plate the naan wedges behind the tabbouleh salad. Plate the falafels next to the tabbouleh salad. Garnish the platter with a lemon wedge.
