MM: Classic Greek Salad


I have been on such a HUGE break from posting! I've been cooking, but just had no time to post (but last semester of law school/graduation/bar prep) or even make my food look pretty enough to take a picture of it :) But this has been a meal I've consistently been making for lunch during busy bar prep season! It's a classic Greek salad was a delish homemade Greek vinaigrette that will definitely give you Panera Greek dressing vibes.

INGREDIENTS

-1/2 bag prechopped romaine lettuce

-1/4 red onion

-handful cherry tomatoes

-1/2 green bell pepper

-2 tablespoons feta cheese

-1/4 cup olive oil

-1/4 cup red wine vinegar

-1/2 tablespoon dijon mustard

-salt

-garlic powder

-dried oregano

-Za'atar seasoning

DIRECTIONS

1. Begin by preparing the vinaigrette by combining the olive oil, red wine vinegar, dijon mustard, and a pinch each of salt, garlic powder, dried oregano, and za'atar in a small mason jar. Shake to mix.

2. Next, prepare the vegetables by thinly slicing the red onion, cutting the cherry tomatoes in half, and dicing the green bell pepper.

3. Add the romaine lettuce, red onion, tomatoes, bell pepper, and feta to the bowl and toss with about 1/4 of the salad dressing. Add salmon, chicken, or shrimp for protein if desired.
