Simple Arugula Salad


This salad is the perfect side salad for any meat or pasta-based Italian dish! This salad is light and refreshing, but shockingly flavorful! And when you are pouring your energy into an impressive main dish, the last thing you want is a complicated side with a long list of ingredients. You'll be excited to know that this salad will only set you back 5 ingredients (not including salt & pepper)!

INGREDIENTS

-1 container or bag baby arugula

-3-4 roma tomatoes, small dice

-Shaved Parmesan

-1 lemon

-Extra virgin olive oil

-Salt & freshly cracked pepper

DIRECTIONS

1. Begin by adding the arugula to a mixing bowl along with the diced tomatoes (set aside some tomato for garnish). Add a generous handful or so of shaved parmesan to the bowl.

2. Next, squeeze the juice of 1 lemon over the salad (make sure to catch any seeds). Drizzle with enough olive oil to coat the arugula, but don't drown it.

3. Finally, add a large pinch of salt and plenty of freshly cracked pepper to the mixing bowl. The freshly cracked pepper is key so don't skimp on it!

4. Toss the salad with tongs and transfer to a serving bowl. Garnish with the reserved tomato and a few more shaves of Parmesan.
