Spicy Italian Sausage and Broccolini Flatbread


In the words of Guy Fieri, *welcome to flavor town.* This little flatbread is jam packed with flavor left and right. It is the perfect fancy weekend lunch, fast dinner, or impressive appetizer for girls night. After a taste of this flatbread, you'll be adding it into your rotation of regular recipes. What really takes this flatbread over the top is the broccolini. In the oven, the broccolini florets get crispy and blackened while the stems remain tender. This adds a nice savory roasted vegetable element to this flatbread, which plays nicely with bold flavors like garlic and chili pepper.

INGREDIENTS

-1 whole wheat flatbread

-1 tablespoon garlic infused olive oil

-1/2 teaspoon minced garlic

-1/4 cup basil pesto

-1 spicy Italian chicken sausage

-2-3 heads broccolini

-1/3 cup shredded mozzarella

-Parmesan

-1/8 teaspoon crushed red pepper

-3-4 leaves fresh basil

DIRECTIONS

1. Begin by preheating the oven to 400 degrees.

2. Heat olive oil in a skillet over medium heat. Thinly slice the sausage link, add sausage to the skillet, and saute until well browned. Remove sausage from the skillet and set aside. Add more olive oil to the skillet if needed. Thinly slice the broccolini, add to the skillet, season with salt and pepper, and briefly saute.

3. To construct the flatbread, drizzle the garlic infused olive oil on the flatbread with the minced garlic and pesto. Use a kitchen brush to spread the olive oil, garlic, and pesto over the flatbread. Next, sprinkle mozzarella on the flatbread, top with sausage and broccolini, and sprinkle with more mozzarella. Sprinkle with grated parmesan and crushed red pepper.

4. Bake the flatbread for about 10 minutes. Then broil the flatbread for a few minutes until the edges are crispy and the cheese is browned (watch it so it does not burn). Remove from the oven and top with more grated parmesan and fresh chopped basil.
