Sesame Shrimp and Bok Choy


I have been in a bit of a stir fry rut. I have had one go-to sauce for awhile and was looking to mix it up. Enter sesame sauce! This baked "stir fry" really hits the spot and is a great healthy meal option. Also, if you throw the sauce together ahead of time, this meal takes no time to put together, which is exactly what I'm looking for after a long day at work.

INGREDIENTS:

-1 serving raw shrimp

-2 baby bok choy

-1 serving brown rice

-1 scallion

-1/4 cup soy sauce

-1/4 cup honey

-1 tablespoon sesame seeds

-1 tablespoon rice vinegar

-1 teaspoon sesame oil

-1 teaspoon minced garlic

-1 teaspoon minced ginger

DIRECTIONS:

1. Begin by preparing the sesame sauce. Mince the garlic and ginger. Whisk together the soy sauce, honey, sesame seeds, rice vinegar, sesame oil, garlic, and ginger.

2. Next, cut the bok choy into halves. Thinly slice the green parts of the scallions.

3. Preheat the oven to 360 degrees. Add the bok choy to a sheet pan and brush with the sesame sauce. Toss the shrimp in the sesame sauce and add to the sheet pan. Bake for 10 minutes.

3. Once the shrimp and bok choy are done baking, plate the rice, shrimp, and bok choy on a plate. Garnish with more sesame seeds and sliced scallions.
