Chicken and Wild Rice Soup


This might not be my prettiest soup, but it sure is easy to make in the instant pot and packed with flavor thanks to Trader Joe's 21 Seasoning Salute! This no frills, healthy soup is made with only whole, hearty, and basic ingredients, making it the perfect make ahead soup for a week's worth of satisfying, guilt-free lunches. Many people add cream to this type of soup, but I keep it light by leaving it brothy!

INGREDIENTS

-1lb chicken breast

-1 cup uncooked wild rice blend

-1 white onion

-3-4 stalks celery

-3 large carrots

-2-3 cloves minced garlic

-1 quart chicken broth + 2 cups water

-2 tablespoon Trader Joe's 21 Seasoning Salute

-2 bay leaves

DIRECTIONS

1. Begin by preparing the vegetables. Dice the white onion, celery, and carrots.

2. Plug in the instant pot and select the "Saute" mode. Once hot, add olive oil and chopped onion, celery, and carrots. Cook until vegetables have softened.

3. Press "Cancel" on the instant pot. Add all of the ingredients to the instant pot and season with salt and pepper.

4. Place the lid on the pot and lock in place (make sure steam release knob is turned to "Sealing"). Press the "Soup/Broth" button on high pressure and use the "+" or "-" button to select a cook time of 15 minutes. Once finished, let the pot sit undisturbed for 10 minutes. After 10 minutes, manually release the remaining pressure by turning the steam release knob to "Venting."

5. Remove the chicken from the instant pot and shred with two forks. The chicken should fall apart easily. Add the shredded chicken back to the instant pot, and remove the bay leaves before serving.
