Asian Kale and Quinoa Salad


With summer approaching, it's time to transition to meal prepping salads!! Mad Greens has a similar salad on their menu, but you can win at work lunches by packing a cheaper version that's even better for you! I also grill or bake salmon fillets to eat with this salad to add some protein and healthy fats!

INGREDIENTS

-8oz bag frozen quinoa

-5oz chopped kale

-5oz spinach, torn

-5oz shredded carrots

-9oz shelled edamame

-4 scallions

-Slivered almonds

-Trader Joe's Sesame Soy Ginger Vinaigrette

DIRECTIONS

1. Begin by microwaving the frozen quinoa. Once cooked, put in the fridge to cool.

2. Thinly slice the scallions and tear the spinach into smaller pieces.

3. Add the following to a large mixing bowl: chopped kale, torn spinach, shredded carrots, edamame, sliced scallions, and cooled quinoa.

4. Mix and divide into 4 tupperwares and top with slivered almonds. Bring a bottle of vinaigrette with you to work, and drizzle on salad when ready to eat!
