SM: Asian Orange Salmon


Craving the flavor of Panda Express Orange Chicken but trying to be healthy? Then you definitely need to try this Asian Orange Salmon! And it's only a few ingredients to make the delicious orange chicken copycat sauce!

INGREDIENTS

-1 salmon steak

-1/4 cup freshly squeezed orange juice

-3 tablespoons honey

-2 tablespoons soy sauce

-3 cloves grated garlic

-1 pinch crushed red pepper

-1/3 bunch asparagus

-1 cup cooked brown rice

-Scallions

DIRECTIONS

1. Preheat the oven to 400 degrees. Line a baking sheet with foil. Snap off the hard ends of the asparagus, place on the baking sheet, drizzle with olive oil, and season with salt, pepper, and garlic powder.

2. Drizzle the salmon on both sides with olive oil. Season the salmon on both sides with salt, pepper, and garlic powder. Place on the baking sheet with the asparagus. Bake for 20 minutes.

3. Meanwhile, combine the orange juice, honey, soy sauce, garlic, and crushed red pepper in a sauce pan. Simmer until the sauce thickens. This should take about 5-8 minutes.

4. When the salmon is finished cooking, add the salmon to the sauce pan and glaze with the orange sauce.

5. Serve the salmon over brown rice with the asparagus on the side. Garnish with sliced scallions.
